This week, I decided I wanted to try something a little different than my usual recipes, and give a shot at a remix of an Indian classic. Chai is a staple in every Indian and South Asian household, and is commonly served with an assortment of sweet or savoury goodies to keep your guests entertained. It stands to reason then, that combining the flavours of chai with a cookie would result in the most perfect and delicious fall treat!
For the majority of this recipe, I used this recipe from Ginny over at In Bloom Bakery! It’s one that my sister has used before to great success, though I wanted to try and tweak it to see if I could recreate the flavours of chai that I love so much. For the spices, I cut back on the amount cinnamon significantly in comparison to the original recipe, using about 2 teaspoons instead of an entire tablespoon and a half. I also increased the amount of all the other spices, leaning a little more heavily on the cardamom since that’s the flavour I prefer to taste most prominently in my chai.
I was super happy with how they turned out for the most part, they’re absolutely delicious cookies with crisp edges and a soft pillowy interior, but there was something missing in the flavour profile that I couldn’t quite put my finger on. It wasn’t until I pulled them out of the oven that I realized there was no flavour of real tea in them! Next time I make them, I think that I will substitute out one of the egg yolks in favour of a couple tablespoons of strongly brewed orange pekoe tea to see if I can impart a little more of that chai flavour.
I was craving grilled salmon steak today and saw this juicy recipe. Today, I decided to make my own grilled salmon steak by remixing the recipe!
Recipe:
Salmon
Black Pepper
Salt
Mustard
Mayonnaise
Garlic
Green Beans
Enoki Mushroom
Oyster Mushroom
Yellow Potato
Olive Oil
Rosemary
1 Table Butter
Green Onion
Sugar
First, you have to marinate the salmon with black pepper and salt. Do not marinate the skin so we can cook the salmon crispy. Leave it for about 10 mins, and let’s make the sauce! Mix 1 teaspoon mustard with 1 tablespoon mayonnaise and add two spoons of sugar. If you want more sweetness in your sauce, you can add more sugar. Slice the green onion and mix it with the sauce. When you’re done with making the sauce, slice the garlic thinly and take out your favourite frying pan. Put about 4 tablespoons of olive oil and fry the garlic until it’s brown and crispy. When the garlic is crispy enough, take out the garlic and put marinated salmon into the garlic oil.
Press the salmon for about 10 seconds, so the skin is grilled crispy enough. Lower the heat and leave the salmon for 5 mins. Take out half the butter, rosemary and more sliced garlic and add to the frying pan. Let the butter melt and mix with the scent of rosemary and garlic. When it melts, use a spoon to spread melted butter oil over the thick part of the salmon so that all parts of the salmon are cooked evenly. Do not throw away the oil because it will be used to cook vegetables.
Now the salmon is cooked, it’s time to cook the vegetables. Make a hole in the potato with a sharp fork and put it in the microwave for 8 mins. While the potato is cooking, Put enoki mushroom, oyster mushroom, and green beans into the oil that we cooked salmon. Add half the butter and stir until the mushrooms are slightly brown.
Finally, decorate the plate with sauce, rosemary, and fried garlic and put everything we cooked! It’s time to eat, yum!
Here’s my actual result; it was so crispy, buttery, and had so much flavour! Hope you love it too.

We have learned how to create an online presence throughout this semester, and I believe that through “ChainStitch,” I have accomplished this. I have published new articles about every possible subject about fashion through my blog, and through this, I have learned how to find, relate to, and engage with my audience. An initial task to learn how to express my thoughts and interests professionally and engagingly has evolved into so many things for me, from learning about fashion through my research of my articles to job opportunities in the world of fashion.
When I began to create my publication, I was faced with choosing what subject my content focused on and how I would be presenting myself to my audience. Deciding how to “frame, curate, share, and direct (an) engagement stream” (Campbell) would be the first step in building my cyberinfrastructure. When choosing the topic on my blog, I chose one where I could speak on the topic with both passion and knowledge while still allowing myself to learn about the topic speaking on it. I also thought about how I would frame my digital garden; I knew I had a space where I could talk about my opinions about my interest rather than stating facts. I wanted my audience to understand that I am not above them, but instead we are equals, learning about this topic together(Suler 2004).
When I first began, I imagined my audience as those who were interested in fashion but had not been able to learn due to the elitism that the fashion community has. I decided to begin my first set of writings to be very basic, not using any jargon as not to alienate those who have not yet been introduced to the world of fashion. I would then begin using more niche terms and writing about more complex topics that would require past knowledge or reading my previous articles. I then realized that my audience was far more vast than previously thought. I saw those who didn’t even care about fashion, people who have worked in the industry for years, or people who knew far more than me. I saw how my blog was not for those who wanted to learn about fashion but rather for people who wish “to see and be seen, to socialize, and t feel as if they have the freedoms to explore a world beyond”(Boyd 2014)
If my blog were to be about fashion, I thought it important for my website to be very visually appealing. I used earth tones which recently have been extremely popular in manner, I added a playlist that ties into my blog. I also added a list of interesting pieces which I update regularly. Taking what I learned from Lecture Six (Designing yourself), I focused on my blog being simplistic with a consistent and unified design while still easy to use. Using what was established in class, I understood that most readers would only view one to two pages. Using this I used pictures and bold heading to help grab my audience’s attention, allowing for more engagement.
To address my audience directly, I thought it would be essential to have a casual conversational tone in most of my pieces. This helps establish a solid relationship with my audience as they know who they are listening to rather than some faceless, nameless entity. By using everyday language, I feel that it creates a mismatch with the serious tone that high fashion has. This helps break the stigma of my topic while fostering a community of respect between the creator and audience. I also added my personal social media to the site to put a face and personality to my blog, so my audience could better relate to me.
My thinking about publication has significantly changed since taking this course. At first, I had a straightforward and minimal understanding of how to relate to an audience. I was nervous and wary of putting my fashion knowledge to the test by showing it to an audience. Still, after receiving feedback from my peers and my audience, my confidence in the online presence I have created and in myself has grown dramatically. While I won’t be continuing with this blog in the future, I believe I have gotten so much out of this, the most important being an actual career in fashion. Through my blog, I was connected with an individual who works in fashion design. They saw my blog and offered me an apprenticeship in design. I believe this shows how a robust online presence can reach thousands of individuals you would have never met in real life.
For my project I chose to install automated blinds by Hunter Douglas. This decision was made to increase blind longevity, convenience, and smart home capabilities. Blinds usually fail quickly due to user error. From pulling too hard, too fast, or the wrong way, strings fray, fabrics fail, and blinds ultimately do not last as long as they should. As this project was designed with longevity and convenience in mind, I decided to use automate blinds. These are battery powered and do not require any electrical work, and the hub runs on WIFI allowing me to use if this then that, on anything in the house. These blinds also integrate two blinds into one by having a blackout layer and a room darkening layer.
For my last mini assignment I was tasked to make a gif for my blog and this is what I came up with!
Last week, I went to White Rock, and I can certainly say that I am officially ready for the hot weather. If you didn’t know, White Rock is this cute oceanside city in South Surrey. And fun fact, it has the longest pier in all of Canada. The palm trees and beach house vibes got me all excited for spring and summer! With all this in mind, I decided to start dressing more appropriately for the weather.
Wave hands up and down, spin and blackout! And that’s a wrap on the mini assignments for the semester. This GIF represents fun and excitement, I would send it when discussing parties or concerts.
But I have more to say about the artist in this GIF.
This GIF is created from Lauv’s concert, which I attended back in 2018 at Fortune Sound Club. Lauv is a pop artist who is known for his hit song I Like Me Better. In this GIF he is performing that song. Although there is no sound in the GIF, through the lights and his actions you can see that it is a very upbeat and fun song. I think this GIF perfectly describes Lauv and his music.
However, Lauv’s songs range in variety. I Like Me Better is a fun and upbeat song but he also has songs like Sad Forever, which discusses depression and mental health. Through the lyrics in this song listeners can empathize with Lauv and understand what he is going through. Also in the song Lauv sings softly but fast and I think this fits perfectly with the message of the song, because mental illness can sometimes take away ones voice or make it super fast due to anxiety.

I created this infographic in Canva, and the reason I did not match this infographic to the color scheme of my website is because I liked this color scheme better, as the blue color scheme in Canva did not look good with this template. I decided to remix this album cover since Bruno Mars has recently blessed us with new music. Go listen to his new track with Anderson .Paak and Silk Sonic called Leave the Door Open, it is a sexy slow jam that everyone needs to listen to!

Bruno Mars was meant to be a performer, he can keep audiences on their feet. Literally I never sat down when I attended his concert, I also believe he did not take any long breaks but kept performing.
Bruno Mars is an artist that does a bit of everything in terms of genres. He has given us pop, R&B, soul and funk hits. With his dynamic voice and sound, Bruno can create songs that are mood boosters, like Perm, but he can also make listeners emotional with tracks like It Will Rain. Side note: It Will Rain is not on the 24K Magic album but Perm is.
His songs vary in tempos but his upbeat and lively songs are usually considered to be a allegro tempo, and this fast tempo accompanied by lyrics like “Throw some perm on your attitude” ,and “Matter of fact, band, show her how to lay it back!”(from his track Perm on the 24K Magic album), make listeners want to get up and move.
If you are like me and binge-watched Bridgerton in two days, this post is for you. This week in my Pub 101 class, we were given the task to remix something relevant to our blog. I thought long and hard about this and came up with the idea of remixing 19th-century London fashion (as seen in Bridgerton) and making it more 2021 friendly.
If you have not watched Bridgerton yet, here is a quick synopsis. The show centres around Daphne (Phoebe Dynevor), the eldest daughter of the respected Bridgerton family and her adventure entering the marriage market. Joining Daphne are the daughters of her neighbour, Portia Featherington (Polly Walker) and her estranged niece. Failing to attract suitors, attracting the wrong suitors, and a gossip column all add to this drama-filled show.
Besides the incredible plot and dynamic characters, the styling is what truly captivated the audience. From the embellishing on the gowns to the feathered wigs, each character outdid themselves from one episode to another. Although the fashion is immaculate, I cannot imagine myself strolling to the grocery store in a vintage ballgown. Here are some ways to incorporate 19th-century trends into your everyday life
Corsets
In the 19th-century corsets, were made stiff with heavy boning. They would mould women’s upper body into a V-shape, flattening the stomach and pushing up the breasts. Overall, corsets were uncomfortable and meant to be foundation garments that ensured straight spines and pleasing body shapes later in life. Luckily in the 21st-century, we have strayed from these restrictive and uncomfortable fashion habits, gearing more towards clothing as a form of self-expression. Corsets are a fun way to spice up your outfit. I have always been obsessed with the Vivienne Westwood corsets that have renaissance graphics on them. I enjoyed how Bella Hadid styled it with brown cargo pants, patent leather booties, and a slick back ponytail.

Bustier Tops
I would argue that the bustier top is the modern-day version of a corset. Both items can be layered over top of shirts, styled alone, and both accentuate the breasts. I am a big fan of bustier tops and love styling them with baggy jeans and platform Doc Martens. A store that I have been loving recently is Shop Flesh and Bones. It is a Depop shop that sells vintage corsets, bustier tops, and slip dresses.

Night Gowns

In the 19th-century, or at least in Bridgerton, there was a clear distinction between your day clothes and nightly garments. Sleepwear in the 19th-century was simple, white garments and the ultimate in prudence for Victorian ladies. In recent years we have seen a trend towards wearing vintage nightgowns during the day. I am obsessed with the store Eveliina Vintage on Instagram. It is a vintage store based out of Miami and New York City specializing in vintage gowns, slip dress, and sweaters. I would style a vintage nightgown with a chunky knit sweater, white leather sneakers, and a pearl necklace.

Slip Dresses
I would argue that slip dresses are the modern-day version of a nightgown. Both nightgowns and slip dresses are made from lightweight materials such as silk, lace, or satin. This summer, I will be investing in a silk slip dress from Aritizia that I have had my eye on since last year. I would pair this dress with my black cowboy boots, cropped linen jacket, a pair of Raybans, and a claw clip updo.
Here is a quasi-GIF that wears two hats: one that passes as a never ending short video loop that normally constitutes a GIF due to the amount of times I fall over and over again. And secondly, I hope this video inspires you to try- regardless of how many times you may fall down in the process.
